English Air-Dried Ham

The English equivalent of its PDO protected European cousins. They have the story, tradition and a beautiful product. We have the meat, and as a result, a beautiful product. Produced with superior cuts of pork leg from English ex-breeding sow.

A classic salami, made with proper cuts of English pork, hold the potato starch and your other mass production naughty bits. The flavour is simple, subtle and sensational. Fantastic pork flavour, with enough seasoning to show it at its best.

English Chorizo

Nobody adopts and integrates food like the British, and while our entire range is an example of this embrace, the English Chorizo is perhaps the best example. Loved nationally, we had to produce a chorizo, and powered by English pork, it’s a very fine one.

English Pancetta

This country is one of bacon connoisseurs. Pancetta is a dry-cured, sometimes smoked, air-dried variety of bacon that our lovely English pork suits particularly well. One of the finest examples of bacon, from a country making the finest bacon. Truly exceptional.

A handful of nations come to mind when one thinks of beef. Japan for wagyu, Argentina for steak, Britain for roasts. With our exceptional heritage breeds and roasting joints, beef bresaola finds a natural home in England, sharing a flavour profile and appearance with rare roast beef. As English charcuterie becomes established, this will be one of its cornerstones.
